Recipes

Here are some of the recipes we had at the cabin. We just talked about the Oklahoma Caviar but you will love it. Did I miss any? I'm looking for meatloaf, etc.

CHOCOLATE BUTTERSCOTCH SCOTCHEROOS

1 c. corn syrup
1 c. peanut butter
1 (6 oz.) pkg. chocolate chips
1 c. sugar
6 c. Rice Krispies
1 (6 oz.) pkg. butterscotch chips

In large saucepan, cook corn syrup and sugar over medium heat, stirring frequently, until mixture begins to boil. Remove from heat. Stir in peanut butter. Mix in cereal.
Press in buttered 9x13 pan. Melt over hot (not boiling) water chocolate chips and butterscotch chips, stirring constantly until smooth. Spread over cereal mixture. Chill until firm, about 15 minutes.

Oklahoma Caviar
2 tomatoes (or more)
1/2 jalepeno pepper
4 green onions
1/2 C. cilantro
2 cloves garlic

Finely chop all ingredients above and add:

(drain all beans)
1 can garbanzo beans
2 cans black eyed peas
1 can pinto beans
1 can black beans


Buttermilk Syrup
Melt 5 cubes of butter
Add 2 1/2 C. Buttermilk
Bring to a boil
Remove from heat
Add 5 tsp. Vanilla and 2 tsp. baking soda
Stir and be ready to pour into something else (use a large pan)

Yogurt Waffles
1 1/4 C. Flour 2 Tbl. Sugar
1 1/2 tsp. baking powder 2 eggs, beaten
1 tsp. baking soda 1 3/4 C. Plain yogurt
1/4 tsp. Salt 1/4 C. melted Butter
Sift dry ingredients, add eggs, yogurt and butter, stir lightly with a whisk until barely moistened. Add 1/3 C. batter to waffle iron at a time.
