BREAKFAST CHEESE PUFF

CHEESE PUFF

10 eggs
1/4 c. butter or margarine, melted
1/2 c. all - purpose flour
1 T. baking powder

2 (8-oz.) c. shredded cheddar or Monterey jack cheese
2 c. small - curd cottage cheese
2 (4-oz.) cans diced green chili peppers

1. Preheat oven to 350 degrees. Grease a 3 quart rectangular baking dish; set aside. In a large bowl, beat eggs slightly, whisk in melted butter. In a small bowl, stir together flour and baking powder, whisk into egg mixture until combined. Stir in cheese, cottage cheese and undrained Chile peppers. 2. Pour cheese mixture into prepared baking dish. Bake, uncovered, about 40 minutes or until a knife inserted near the center comes out clean and top is golden. Let stand for 10 minutes before serving. Cut into squares to serve. Makes 15 servings or 7 quilters
