Chinese Chicken Salad ~ Margie McGrath
All ingredients are to be chopped into small, equal-sized pieces.
Toss together in a large bowl:
Cabbage, thinly sliced and slices diced
Purple cabbage, thinly sliced and slices diced
Carrots, grated
Celery, finely diced
Green onions, finely diced
2 different kinds of lettuce, chopped into small pieces
1 red bell pepper, finely diced
Radishes, sliced and diced (optional)
1 bunch cilantro (leaves only), finely chopped
chicken breasts, cooked, and shredded or chopped into small, bite-sized pieces
(or you may prefer Costco roasted whole chickens and using all the meat).
Oriental Dressing:
Triple Single
6 T ~ 2 T sugar
1 ½ t ~ ½ t salt
2 T ~ 2 t soy sauce
3 T ~ 1 T sesame oil
¾ c ~ ¼ c olive oil
9 T ~ 3 T rice vinegar
Shake dressing ingredients together well and refrigerate. Pour over salad just
before serving.
Top with dry-roasted peanuts. Enjoy!
Salad may be served in individual Chinese take-out cartons. Fill each carton
with about 1 ½ cups salad and add on top: 2 small cups with lids, one with
dry-roasted peanuts and the other with the salad dressing. Close carton and
refrigerate on tray until time to serve.
Triple the dressing recipe will make enough for at least 7 take-out containers.
